A pithy, fizzy, sweet and sour Pet-Nat grown with organic grapes, hand harvested. Racking and bottling is done in accordance with the lunar calendar. Pressed with skins, spontaneous fermentation, with a secondary bottle fermentation gives a gentle effervescence.
